Yippie!

I finally talked my brother into loaning me this contraption;

http://www.amazon.com/24-Castiron-Group-Griddle-Tripod/dp/B000EZI66Q

It works AWESOME, we have had amazing stir frys and pancakes and grilled cheese and everything in between on it!

Of course, I have to now make him a balistic Nylon Case for it, but it is well worth it for letting me use it on this umbagog trip!!

I am really looking forward to a week of camping and kayaking and exploring and looking for little eaglets... (Not planning on EATING the eagletts, just LOOKING at them, hum, wonder what they taste like...)

So now I have to devise a way to make Pizza on it, I think if I have a large enough Dutch oven or Cast Iron Fry pan to flip over and cover the pizza it may just work... Hum...

Now I just need to perfect the whole wheat crust!

Back to Spam for a minute, in Alaska every year they have a Spam carving contest, and that is about the only use I can really see for the 'glutenous pink nearly like food product'. ;)

Happy trails and keep those recipies coming! Maybe we can do a VFTT cookbook!

oh, I love Umbagog. I confess we hire them to ferry us, our toys, our dogs, and a weeks worth of food and tasty beverages out to our favorite site - but we do kayak once we get our there

I made rosti (swiss potato pancake) for breakfast last summer - on the coleman stove, but I bet you could use the fancy hanging frying pan:

Shredded leftover potatoes (I microwave them at home and store them in a zip-lock)
Chopped up bacon or ham
Shredded cheese (if you like)
salt and pepper to taste

- Fry the bacon and toss with potatoes and cheese
- melt some butter in a skillet (more if you don't have any leftover bacon drippings)
- add the potato/cheese/bacon mixture to the pan, spread it evenly and press down to firm the pancake
- fry until golden brown
- flip (I used a plate to help) and fry on other side until done
- spend afternoon paddling it off

Two of my other camping faves are flank steak (yummy and cooks quickly), and pork marinated in lime, fresh ginger and cilantro then cooked on skewers with mango and read onion.

Shredded potatoes, cheese and butter, 3 of the major food groups, how can you go wrong??

Especially if you have CHOCOLATE, the 4th food group, for dessert?!

Sounds like a nice strong pyramid to me!

This will be complete LUXURY camping for me. A tent I can almost stand up in, big enough to actually hold my gear AND my sleeping stuff. I will probably bring the 10 x 10 EZ-UP for over the picnic table. Someone will more than likely provide a screen porch sort of setup. We will have probably have at LEAST 3 Coleman stoves, the Slick Vik Griddle with its own burner & about 1/2 cord of firewood for the fire pit.

There will be games galore, like jenga, phase 10, spoons, extreme crocket, farkle and more.

My main goal is to keep everyone fed and happy in the food department. The ages there will range from around 6 to 72, mostly somewhere in the middle of that bracket...

I am figuring if I have a few great recipies in mind I can freeze a lot of the prep work and store it with friends in the Errol area and just paddle out and take a short drive for 'milk' and other essentials... Ok, like BEER and WINE...
and grab what I need out of the freezer.

Looking forward to some relaxing days, starry nights, and listening to the loons sign me their lullaby...

And most of all, looking forward to getting up REALLY early, sliding into the kayak, and paddeling around in fog so thick you need to cut it with a knife! You feel like you are in a cotton ball at times. The last time I camped on Umbagog and went out early in the morning I couldn't even see the front of my boat... It was one of the most relaxing times in my entire life.

I actually used it for a meditation when I had to have an MRI, and it worked out wonderfully. (never had done it before, hope to never have to do it agian!)

Keep those interesting meals and recipies coming! We will have nearly an all inclusive kitchen apparenty, so I will be pretty much game to attempt anything culinary!!

Can one acquire a special Knife for this maybe like the ones that are made now for carving pumpkins. If so Team Dom may need one of these for their trip to Denali

V. important! You may know this already, but please be advised that in my experience the water at Umbagog will NOT keep tasty beverages properly chilled. Make sure you have adequate ice and cooler space!

One for the fish fans: put trout in a foil pouch with lemon slices, and fresh thyme, and throw it on the grill. IT cooks pretty quickly, and since it's wrapped in foil, it stays very moist and won't stick to the grill.

Which site are you staying at?

Yeah, I think they should all have to pack ULU's for the trip too!

Would be migthy hard to carve spam with one though...

:p

A couple of people have asked me what an ULU is, so here is a link;

http://www.ulu.com/

I have seen these in action at the Alaska State Fair by people who REALLY knew what they were doing.

So, if Team Dom runs into any Grizzlies they can have fresh meat and a few nice rugs...

;)
