I know where this guy lives, it's a ways away, diagonal into the neighbors yard. Critters are not allowed to settle around the house, shed or decks: scares my wife and drives my dog nuts, so he "discourages" them or I do. The back fields are fine.

It looks like a cross between a Manchurian Yak and an Australian Dingo. We came upon a heard of them whilst riding across the Pampas in Argentina. They were very good with mustard. Stringy, though. Needed a whole box of toothpicks.

Thanks. It sure was a surprise seeing one on Monroe.

Several years ago I saw a woodchuck on the ridge near Franklin Pierce ... and it was a rather cold day in February, below zero. It's probably the same "colony". It occurred to me that February might be mating season for woodchucks - I know that's when you start hearing/seeing foxes in NE.

I know some people do eat them. If you are serious then how do you prepare them?

General concept, not a real recipe. You can make a basic marinade for them. wine or vinegar, onions, raisins, pepper, seasonings like juniper berries, cloves etc. No salt until you season the final dish. let it marinade for a while, two days or so.

You can then brown the woodchuck peices in a skillet (some insist on using bacon fat) Then braise it in the marinade, might need to add water. Thicken with a flour/water mixture. Serve over buttered egg noodles. Any good beer will add to it.

I have had the younger ones simply fried like chicken.

And for dinner music some Doc Watson

Good man. :)

I'm all for the free exchange of game recipes, believe me, but I'm sure we are now offending the non-gamers (you reading us still, Jade ?) and the Mods.
Back to hiking !

Are these critters also called "gophers" in some parts??

Speaking of Marc - don't let him near these little guys....... :p

As I understand gopher is a local/colloquial term for members of the pocket gopher family and some groundsquirrels. The groundhog aka woodchuck aka whistlepig is in the marmot family.

I'm not trying to offend anyone and I don't see why someone would be. I wouldn't be offended about a passing: tofu, veggin, vegentarian, organic, chinese (yuck) and whole food statment in a hiking string.

I try to stay open minded and tolerent of: other views, what they say, believe, actions etc. We got a lot variety in this world. We should enjoy the diversity.

If I were to be offended about what people posting about what they eat. I'd just leave it go. :)

Maybe this should be general back country?

Sorry but that seems a little too sensitive to me. No offense intended. :)

No offense taken. But if you plan to continue to post here you'll have to learn we are allowed a certain amount of deviation from the stated intention of this excellent free forum; once our posts are viewed as irrelevant and/or offensive we run the risk of being delisted.

Ok - how about "how would you prepare it on the trail?"

;)

(I'd bet my pal Augie would prefer it as carpaccio)

Seriously, I wonder how long it takes them to go from marten-y-looking youngster to full-on waddling woodchuck.
